
Stan Brown’s Soft Molasses Cookies
Preparation time: 20 minutes
1 c unsalted butter
1/2 c sugar, plus additional for dusting
1/2 c honey
1/2 c molasses
2 1/4 tsp baking soda
1 tsp salt
11/4 tsp cinnamon
1 1/4 tsp ground cloves
3/4 tsp ground ginger
2 large eggs
3 1/2 c unbleached white flour
In large bowl cream together butter and sugar until light and
fluffy. Add molasses while mixing at slow speed. Add baking
soda, salt and spices. Add eggs, one at a time, beating well after
each.
Scrape down sides of the bowl, then mix-in flour.
Cover the bowl and refrigerate for 1 hour.
Preheat oven to 350ÅãF. Lightly grease two baking sheets.
Shape or scoop the dough into 11/2-inch balls. Roll each ball in
sugar and place on baking sheet, leaving about 2 inches between
them. Bake for 10 minutes; the centers will appear soft and puffy.
Cool cookies on the pan for 10 minutes, then transfer to a wire
rack to cool completely.
Makes 44 cookies.
According to Stan, these cookies can be eaten every day, and thus a new batch may need to be baked every week!
